     Easy Lebanese Salad, also known as Lebanese Salata, is a salad mixing chopped tomatoes, bell pepper, onion, cucumber, green onion and parsley topped with a lemony-mint dressing. This is healthy, light and the prefect addition to any meal or add grilled chicken or salmon to make it a meal itself. 

    Ingredients

    • 3 medium tomatoes, diced {about 2 cups}1 green bell pepper, seeds removed, chopped1/2 of an english cucumber, seeds removed, chopped5 green onions, white and green parts chopped1/4 cup fresh parsley, chopped1 small onion chopped {about 1/2 cup}Romaine lettuce, choppedFor the dressing::1/4 cup extra virgin olive oil1/4 cup of lemon juice2 garlic cloves, minced1 teaspoon dried mint {more or less to taste, or 1 Tablespoons of chopped fresh mint}1 teaspoon of your favorite spice {optional: try sumac or za'atar}1/2 teaspoon of kosher salt {more to taste}Black pepper to taste
